 STARTERS 

Duck Foie Gras cooked in a cloth / slow-simmered dried autumn fruit and orange flavoured ginger bread powder 17 €

Hind terrine with  Juniper berries / stewed "Granny-Smith" apple with local red wine 13 €

"Cappuccino"  Chestnut soup / braised celeriac with chestnut 13 €

Ravioli (open-faced) with "Pelardon des Cevennes" goat cheese/light mushroom juice 13 €

Salad of sweet regional onions/cured pork loin shavings and grilled chestnuts finely grated 13 €

 

FISH

Pan-sautéed fillet of "Fario" trout / lentils with chestnut flakes 17 €

Pan-sautéed Scallops kebab / beetroot Carpaccio 20 €

Pan-sautéed fillet od duckling / parsnip purée with orange and roast figs with honey and Eglantine berry sauce  17 €

Breaded shoulder of Lamb confit / Butternut squash with broad beans and a sauce with mild spices 18 €

Wild boar "Fricandeau" (larded and braised medallion with cepe mushroom / mashed potato / violet mustard sauce 17 €
